Lemonade Scones Recipe

1

What do you do when it's freezing and miserable outside.. you make scones of course! These lemonade scones are the fluffiest scones ever and they are so easy to make.

All you need is..
2 cups (300g) of self-raising flour
1/4 cup (55g) caster sugar
1/2 cup (125ml) thickening cream
(+ a little more for whipped cream)
1/2 cup (125ml) lemonade
1/2 tsp salt
2 tbs milk

Then just follow these steps -
1.   Preheat the oven to 220C & line a tray with baking paper.
2. Combine flour, sugar and salt in a large bowl.
3. Add cream and lemonade and mix to form a soft dough.
4. Knead with hands to a thickness of about 2cm.
5. Cut out 8 scones using a 6cm round cutter and place on the baking tray
(brush the tops with milk).
6. Bake for 10-15 minutes (until lightly browned).

..and voila! You should have soft delicious scones to enjoy with jam and whipped cream :)

Before and After - Our Dining & Lounge Room

It has been FOREVER since I've shared some home decor updates with you.. I think the last update was our bathroom and that was in 2010! :O 

One of the big things we've done since then is put up venetion blinds throughout the house (replacing the previous owner's homemade blinds that were hideous up close) and I think it's made a huge difference to the "feel" of the house.

1 Month Postpartum Update!

I can't believe it's already been a month since I gave birth! Time is just flying by!

Body
My weight has stayed the same this week. I've started to eat better so hopefully in the next few weeks it will start to go down (still 4.1kg to go) but I'm not in any rush. I'm still wearing the SNC recovery shorts and will continue to wear them until I'm back to my pre-pregnancy weight.

Height/Weight
We weighed him this morning and this little tubster is now 4.1kg (9.0lbs) which means he's put on 700g in 2 weeks. I'm not sure how tall he is, but he looks like he's grown to me. We'll have to get him measured soon.

Sleeping
He's started sleeping a little longer (until 3-4am).. it's not every night but it's occurring more often which is great. I've started feeding him in bed which seems to keep him settled, so he doesn't need soothing afterwards. After I feed him and put him to bed, I then pump. He loves sleeping on his side, but I only let him do this if I can watch him as I know it's not recommended.

Eating/Feeding
James has been feeding like a champ. I've had a few rough days (I think he was going through a growth spurt) where he was cluster feeding all day. It was exhausting! He's gone back to feeding normally now though and is stacking on the weight.

Sizes
He's now in size 0000 (Newborn) and is quickly outgrowing them. It won't be long until he's grown out of the small cloth nappies too. 

Milestones
He slept for 5 hours straight this week (and probably would have slept longer if I hadn't woken him for a feed). I hope that means he'll sleep for 4 hours more regularly from now on (here's hoping!)

My Postpartum Diet & Fitness Plan - Phase 1

My postpartum diet so far has been non-existent.. I've just been eating whatever, whenever - and it's been great haha. 

Sadly though, it can't last forever and it's time to start making some healthy changes to my diet. Nothing too crazy, I'm planning on taking it nice and slow. I've titled this post phase 1 for that very reason, each phase (fortnightly) I'll make healthy changes to my diet and incorporate more exercise. I figure if I share it here, I'm more likely to stick to it!

So here's what I plan to eat on a typical day..

Breakfast
Rice Bubbles or Nutrigrain with Skim Milk
No Change

Cup of Decaf Tea with 2x Arnotts Biscuits and 1x Paleo Nut Ball 
Instead of a Cup of Decaf Tea with 4x Arnotts Biscuits

Morning Tea
Green Smoothie
No Change

Lunch
Toasted Sandwiches on Multigrain Bread
(Ham/Tuna, Corn & Cheese)
Instead of Take away or Left Overs

Afternoon Tea
Low-fat Yoghurt with Museli
Instead of Vegemite Toast

Cup of Decaf Tea with 2x Arnotts Biscuits and 1x Paleo Nut Ball 
Instead of a Cup of Decaf Tea with 4x Arnotts Biscuits

Dinner
Healthy Home Cooked Meal (At least 3 per week). 
Instead of Frozen Meals or Take away

Dessert
Cup of Decaf Tea with 1x Arnotts Biscuit and 2x Paleo Nut Balls 
Instead of a Cup of Decaf Tea with 4x Arnotts Biscuits

Drinks
H2Coco Pomegranate and Acai Coconut Water
2 Litres of Water

Exercise
3x 30 minute walks a week
2x 30 minutes of gardening a week

Like I said, it's going to be a slow transition. I'm obsessed with tea and biscuits at the moment and I'm not quite ready to give them up! haha.

3 Week Postpartum Update!

Recovery
I feel pretty much back to normal. My belly's still numb though and feels a bit bruised when I touch it. It also feels jiggly which doesn't feel very nice, can't wait for it to go back to normal. Another thing I'm looking forward to is driving again! You can't drive for 6 weeks after a c-section (boo!)

Body 
I gained more weight this week (0.6kg / 1.3lbs).. I need to lose 4.1kg (9.0lbs) now to get back to my pre-pregnancy weight. I need to start losing weight not gaining it! haha. I've been eating really badly though. I'm going to start make some healthy changes to my diet this week. I may even do a blog post about it :) Once I've got my diet sorted and feel ready, I'll start incorporating some exercise too.

Height/Weight
We weren't able to take him to get weighed this week but I will try and get an update next week! Right now going by his last height/weight he is 49cms tall and 3.4kg (7.5lbs). I'm pretty sure he's gained weight though as he's gone up a size and feels heavier too!

Sleeping
He usually only wakes once a night to feed around 2-3am and then again around 6am. At night I get up and feed him in the nursery, so that I can pump too (as my boobs are pretty full/sore around then from skipping the 10.30pm feed). 

Eating/Feeding
James has been feeding for longer and in turn will nap for a little bit longer as well (but it still depends on the day). Most days he has big feeds but some days he likes to cluster feed (which means smaller and more frequent feeds - I hate these!). I'm still pumping enough for one big feed at 10.30pm and a little extra to freeze (for babysitters/emergencies etc). I usually need to pump before bed and when I get up at night as my boobs get sore from missing the 10.30pm feed.

Sizes
He's currently in that annoying "in between" stage of being too big for size 00000 (Tiny Baby) and too small for size 0000 (Newborn). He still wears the same size nappies (we got a tonne more modern cloth nappies in size small and they fit him perfectly). 

Milestones
Lifting his head from one side to the other during tummy time. He's also staying awake for longer during the day.

OOTD: Public Outing

.


Yesterday we ventured out with James for his first real public outing. We decided to go out for lunch and do a bit of shopping (how can I resist myer's one day sale!). 

I was really nervous about taking him out, but it all went relatively smoothly. I even had my first public breastfeed (covered of course!).. despite the stares, I felt pretty comfortable. 

While we were walking around the shopping centre, people came up to us and gushed about how cute James was and passed on their congratulations. Naaw people can be so nice. 

 I just wore this simple outfit. The jeggings are high-waisted which is great as it hides my tummy and doesn't cut-in to my c-section incision. I got them on sale from Dorothy Perkins (I'm obsessed I know!) for $30. To keep things casual, I just teamed them with sneakers, a loose fitting top and cardi. 

This week, I'm going to attempt to head out for a few hours on my own to catch up with friends - I'm really looking forward to it. Who'd of thought leaving the house would be so exciting! haha.
