Overnight Paleo Bircher Recipe

It sounds a bit odd but it's sooo delicious!!

Not only that but it's super healthy (packed with protein, omega-3 fats, vitamin A, E, D and B, calcium, zinc, magnesium and more), plus it's easy peasy to make!

All you need is..
2 tbs LSA meal (ground linseed, sunflower and almond kernels)
1 tbs almond meal
1 tbs shredded coconut
1 tsp cinnamon
1 tsp natvia
1 cup almond milk
small handful of frozen (or fresh) blueberries
small handful of frozen (or fresh) strawberries

Then just follow these 4 simple steps -
1. Combine LSA meal, almond meal, coconut, cinnamon and natvia in jar/container/bowl.
2. Put blueberries and strawberries on top of the dry ingredients.
3. Pour almond milk in and mix all ingredients together.
4. Store in the fridge overnight and eat in the morning!
(or eat straight away if you're using fresh fruit)

Simple. As. That.

Lemonade Scones Recipe

What do you do when it's freezing and miserable outside.. you make scones of course! These lemonade scones are the fluffiest scones ever and they are so easy to make.

All you need is..
2 cups (300g) of self-raising flour
1/4 cup (55g) caster sugar
1/2 cup (125ml) thickening cream
(+ a little more for whipped cream)
1/2 cup (125ml) lemonade
1/2 tsp salt
2 tbs milk

Then just follow these steps -
1.   Preheat the oven to 220C & line a tray with baking paper.
2. Combine flour, sugar and salt in a large bowl.
3. Add cream and lemonade and mix to form a soft dough.
4. Knead with hands to a thickness of about 2cm.
5. Cut out 8 scones using a 6cm round cutter and place on the baking tray
(brush the tops with milk).
6. Bake for 10-15 minutes (until lightly browned).

..and voila! You should have soft delicious scones to enjoy with jam and whipped cream :)

Green Smoothie Recipe - Sweet Pear

My go-to green smoothie at the moment is this sweet pear smoothie. It's packed with fiber, folic acid, vitamin A and C which keeps you fuller for longer, helps your body heal quicker (yes please!) and provide extra support for your hair, skin and nails.

What you'll need
1x Pear (I love the green nashi pears!)
1x cup of Almond Milk (unsweetened)
1x cup of Spinach Leaves
1x Banana
1x tsp Ground Cinnamon

It's so sweet and yummy - I can't get enough! I can really tell a difference with my skin too after having one of these in the morning.
